Where the recipes come from

The original 50 recipes are adapted from the supplied Raw Dessert Cookbook. An additional 25 original editorial recipes make up our gluten-free lighter dessert collection, built around cakes, cookies, cheesecakes and puddings with measured portions. The lighter collection excludes wheat, barley, rye, tropical fruit, coconut, cocoa butter and oats; its ingredient swaps keep those same exclusions. Unsweetened cocoa powder and allulose are allowed, and some recipes contain eggs, dairy or nuts. Use gluten-free-labeled packaged ingredients and prevent cross-contact during preparation. Interactive ingredient choices and nutrition calculations are additions for this website.

These recipes and suggested substitutions have not been independently kitchen-tested by Raw Desserts. Swaps are practical starting points: a different ingredient can change sweetness, flavor, texture, and how firmly a dessert sets. Read the note beside a swap before using it.

About the photographs

Dessert images are AI-generated illustrations, including the images supplied with the cookbook and the illustrations for the lighter collection. They show a serving idea, not a photograph of a tested recipe. Your finished dessert may look different, especially after substitutions.

Does “raw” mean no heat at all?

Not throughout this collection. Many recipes use blending, chilling, or freezing, but the source also includes a roasted plantain recipe and preparations that heat agar. Ingredients such as chocolate, maple syrup, and oats may have been heat-processed before reaching your kitchen.

The lighter collection includes baked and chilled desserts. It is not a raw or vegan collection. Follow each recipe’s method, including its cooking temperature, doneness checks and storage guidance. Use each recipe’s method and ingredient labels to decide whether it meets your own definition of raw. “No bake” describes preparation without baking; it does not establish that every ingredient is unheated.

Useful numbers, clearly explained

Nutrition estimates use live FatSecret food data and the ingredient amounts in your current recipe. They are estimates rather than a laboratory analysis. Missing data is shown as unavailable, and swapping one ingredient does not establish that the finished recipe is suitable for an allergy.

AI variations let you ask for more protein, more fiber, fewer calories, or changes that avoid coconut oil and cacao butter. Cloudflare Workers AI proposes ingredients and preparation notes using available FatSecret reference data. Nutrition comparisons are calculated separately from the AI response. Review the changes before applying them. A nutrition improvement is not a guarantee of a successful recipe, and AI variations have not been kitchen-tested.
